  • 500 g beef fillet
  • 300 g cup mushrooms, finely chopped
  • 200 g hard cheese, coarsely grated
  • 2 medium onions, peeled, cut into half rings
  • 3 tbsp olive oil
  • oil for frying

Cooking method
  1. Clear the meat of the silver skin. Place the meat on a cutting board, cut along the thicker side to the middle and unfold like a book. Cover the layer with cling film and beat off, but so as not to tear the meat. Remove the cling film. Drizzle with oil, season with salt and pepper. Leave to marinate for 15 minutes.
  2. In a frying pan over medium heat, fry the onions in oil. Add mushrooms and fry over medium heat for 10-15 minutes. Add salt, pepper, cream, simmer for 3 minutes and remove from heat.
  3. Heat oven to 160°C. Put mushrooms, onions and cheese on the edge of the meat slice. Roll up the meat and tie with twine to secure it. Fry the roll in a pan on all sides until golden brown. Wrap in foil and bake for 40 minutes.
My tips and tricks
Did you know that dry porcini mushrooms make a great spice? To do this, grind them in a coffee grinder into a mushroom mixture and add them to mushrooms or any dish that is appropriate to give a mushroom aroma. In our recipe, to unleash the mushroom flavour, add a little mushroom mixture to the mushrooms as you roast them.
