Course “Fundamentals of Italian Cuisine”

We decided to devote the first culinary course in our school to our beloved Italy. We launched our full course of Italian cuisine for beginners “Basi della Cucina Italiana”. It consisted of 8 lessons. The most popular food in the world is Italian, and at the same time it is tasty and simple – that is what we wanted to fully grasp ourselves and teach others. For 2 months, chef Konstantin Rossoshenko cooked, told and showed us the intricacies of cooking traditional Italian dishes. Our friend Francesco, who is from Italy himself, helped the chef, shared family recipes and told us about traditions of Italian feasts. During this course, we used cookware, kitchen appliances and accessories, that are usually used by Italian housewives. Kitchenware without which it is difficult to imagine the kitchen of an Italian hostess: a pasta machine, forms for ravioli, a parmesan mill, a stone mortar, a pasta pan, a grill pan, a tiramisu mold, and a kitchen chopper. Sommelier Ksenia Yangulova, Goodwine, selected wines from famous Italian producers for us to taste at each lesson of the course. We did everything with our own hands: kneading the dough, rolling pizza, slicing pasta, making ravioli, baking savoiardi, drying tomatoes, preparing sabayon. And in the end of each lesson, as it is customary in Italian and Odessa traditions, we all sat down together at the table and celebrated Dolce Vita.
