The meat not as a sole, but with a soul – “Balkans Yastia”

The meat called biltong is the recipe rooted in ancient times, when hunter-gatherers spent weeks tracking the flock of animals. For fun, it is also called the South African prosciutto. When the hunter finally reached his goal, the animal had to be used 100%. Cutting into thin strips and drying the meat ensured that it would be edible for a long period. Biltong contains a maximum of protein and a minimum of fat. It is a bit hard, but has incredible “umami” taste. Bessarabian Bulgarians, once a nomadic people, have similar meat products.
