Before I moved to England and went to my first British Christmas dinner, I never knew that parsnip could be so delicious. The British have discovered it long ago, and in any store, they buy it in the same quantity as carrots or potatoes. Here it is very easy to find it as a side dish, in soups or even desserts. I would like for this wonderful vegetable to also appear on your menu.

My tips and tricks:
Here’s a simple secret on how to make a delicious soup from baked parsnips. Bake a lot of parsnips at once. Part of it will be a side dish: it is an excellent substitute for potatoes. And from the second part, make a delicious puree soup. To do this, transfer the baked parsnip to a saucepan, add milk approximately equal in volume to the parsnip, bring to boil and let it simmer for 5-10 minutes over low heat. Then using a blender to bring the soup to a smooth consistency and add a little salt. Warm winter soup is ready!
