Oat herring and apple rings

I suggest you do something very unusual with the herring – fry it, and not eat your favourite lightly-salted version. The main thing is not to confuse – the Irish fry fresh herring fillets, and fried salted herring comes from the Chinese cuisine 🙂

Ingredients

  • 4 whole herrings
  • 2 large sweet apples
  • 115 g medium oatmeal
  • 4 tbsp flour
  • 1 egg, beaten
  • 1 tbsp olive oil
  • oil for frying
  • freshly ground black pepper
  • salt

Cooking method

Step 1

Bone the fish. Rinse fillets and wipe the herrings with kitchen paper. Make sure all bones have been removed. Season the fish with salt and pepper.

Step 2

Line up three separate plates with beaten egg, flour, and oatmeal.  Heat oil in a frying pan. Just before frying, dip each fillet first in flour, then in an egg, and in oatmeal. Fry the fish until golden brown. After frying, place on kitchen paper to remove excess fat.

Add a little bit of olive oil to the apples and mix. Grill the apple slices until slightly soft. Serve the herring garnished with apple slices.

My tips and tricks:

The herring is like a lottery. If a female is caught, there will be roe, and if a male, there will be soft roe. Don’t tell me you’re throwing them away! This is the ideal protein and source of healthy “fish oil”. And cooking it is easy and simple: season with salt, pepper, dip in flour and fry in oil. You can add a little twist to the dish: make a batter from eggs, flour and salt, dip roe in it and fry again.
