This recipe belongs to the chef Ivan Slinko, who worked for many years in the legendary Odessa steakhouse. The whole city knew: Ivan knows his meat. Ingredients

  • 1 aubergine
  • 1 bell pepper
  • 2 tomatoes
  • 4 cloves of garlic, peeled
  • 2 bunches of basil
  • 50 ml soy sauce
  • 2 tsp honey
  • 200 ml olive oil
  • oil for baking
  • freshly ground black pepper
  • sea salt

Cooking method

Step 1

Heat the oven to 180°C. Put the vegetables on a baking sheet and drizzle with oil, distributing it evenly. Bake in the oven for about 20 minutes until tender. Allow vegetables to cool and peel. Seed the pepper.

Step 2

Tip vegetables, garlic, basil leaves, olive oil, soy sauce, and honey in a food processor and blend until smooth. Season with salt and pepper to taste.

My tips and tricks:

A little tip on how to peel baked peppers easily. Once you take the pepper out of the oven, wrap it in foil so that there are no open areas. Leave it for 10 minutes. During this time, the pepper will cool down and you can take it with your hands. The peel comes off without the slightest effort.
