Tender veal kebab

Despite the fact that we, Odessans, love to eat, sometimes we want to eat something less fatty. Then you can make a kebab from lean veal. Ingredients

  • 1 kg veal fillet
  • 3 sprigs of thyme
  • 3 sprigs of rosemary
  • 3 tbsp olive oil
  • 3 tbsp Worcester sauce
  • 1 tbsp soy sauce
  • freshly ground black pepper

Cooking method

Step 1

Trim the meat from the silver skin and cut into small pieces about 5×5 cm. Season the meat with pepper, add olive oil, Worcester sauce, soy sauce, rosemary and thyme leaves. Rub marinade all over the meat. Marinate in the refrigerator for at least 40 minutes.

Step 2

Thread the meat on grilling skewers. Spread the skewers with meat on the grill as close to each other as possible to make the most of the heat from the coals. Grill the meat for 10-15 minutes. To prevent the meat from burning, it should be periodically sprinkled with water, and the fire should not be allowed to ignite. Put the cooked meat in a bowl, cover, and let it rest for 4-5 minutes.

My tips and tricks:

Thread the meat along the grain, pressing the pieces tightly together. Place larger pieces closer to the centre, and smaller ones at the edges. And also, so that your kebab is always well cooked, fry it on all four sides.
